Cranberry Cake

Notes: This is the recipe that I thought Country Apple Cranberry Dessert was. At least it’s more like the recipe I wanted in the first place.

Lessons:
1. When planning to make something like this, it is wise to actually make it instead of putting it off. I had to get some more heavy cream because what I had gotten expired.
2. I tried a little different technique this time, when re-hydrating the cranberries. I soaked them in cranberry juice. Seems logical to me to rehydrate them with what they lost in the dehydration process. However, I am now able to find whole, fresh cranberries in grocery stores, which leads me to conclude that cranberries are certainly a seasonal item. Still, I wanted to try the technique to make sure that I had an option when cranberries go back out of season again.
3. Something I picked up was to cut the cake before putting the sauce on it. That way the knife doesn’t get as sticky when you are trying to cut it. Sage advice.
4. Now that I’m in a new apartment, I need to re-calibrate my oven. Whereas the previous one seemed to under-cook recipes, it seems that this one over-cooks them.
5. When putting a “pinch” of salt into a recipe, make sure you know what opening your salt shaker is on.

Final Analysis: Even though it looked a little more brown than I remember it, it tasted delicious. It was a good dish to bring to a cookout.

    This is one of my all time favorite cakes. I have found the best way to serve this cake is to cut the cake and plate each piece – then – ladle the sauce on to each piece right before serving. For leftovers, store the sauce and cake separately. You can re-heat the sauce in the microwave. Oh my gosh, just typing about has made me want some. I’m going to go home and make it tonight.

    • Yeah, reading the recipe, it seemed like that was the way you were supposed to serve it, but since I brought it to a cookout, I did not have the capability to successfully pull something like that off. I’ll remember it for the next time though.
